Zucchini stuffed chicken

Ingredients
2 lbs chicken breast about 6 1 inch pieces. With a pocket cut in
1 med zucchini shredded
1tbsp garlic
1/4 cup cottage cheese
1/2 cup mozzarella
1 tsp minced onion
Sea salt pepper
1/3 cup whole wheat panko

Mix together zucchini, cheese, cottage cheese, garlic onion salt and pepper.
Stuff into pocket of chicken. Sprinkle with panko and a Lil more salt and pepper.

Preheat over for 425 and bake for 45 min.

Enjoy with a veggie!

Stuffed top round steak

This is a clean recipe!! And I created it on the 3 day refresh. Lol can you see the ways I torture myself while cleansing. It was pretty much a crowd pleaser in the house!!

Ingredients needed
1 egg
1/2 cup cottage cheese
1/2 cup mozzarella
1/4 cup whole wheat bread crumbs
1 tbsp minced garlic
1 tsp minced onion
Dash paprika, basil, ground red pepper

Mix all of there together!!

1.5 lbs of thin top round steak
1 cup spinach
1 cup vegetable stock
2 cup beef stock
1 tbsp whole wheat flour to thicken

To season sea salt, pepper, and garlic powder.

Lay out the round steak and top with your stuffing mixture then place spinach on top.

Then you are going to roll them up! And place in a 9×13 baking dish.

Season. With salt pepper and garlic.

Add vegetable stock, mix flour into the beef stock. Then add to the pan.

Bake at 350 for an hr and half and slice.
Serve with a veggie and whole wheat noodles

Cauliflower Alfredo Sauce

Cauliflower

I know this is random and sounds weird lol, but I have been seeing this places. And I happened to have a steamed head of Cauliflower in my fridge. So I decided to test it out.

Ingredients

1 Head of Steamed Cauliflower

1 Cup Chicken or Vegetable stock

2tbs minced garlic

1/2 cup unsweetened almond milk

1tbs butter

1/3 cup parmesan cheese (I used Romano)

Sea Salt and Pepper

Blend the cauliflower, stock, and Garlic till smooth. Put into a pot. That is on med heat. Add butter and almond milk stirring occasionally. Season with Salt and Pepper. Bring to a bubble then stir in cheese. and you are done. Serve on whole wheat pasta with a sprinkle of parm. I was actually pleasantly surprised.
