EggRoll In a Bowl

I freaking love Chinese food. So when I heard of this I had to try and of course tweak it.


1 lbs of 93% lean ground Turkey

1 bag of shredded cabbage and carrots

2tbs low sodium soy sauce or liquid amino

1Tbsp minced garlic

1/4 tsp ground ginger

crushed red pepper (did not measure just used what I like. If you don’t like spicy omit)

honey to drizzle (yes honey with egg rolls I love duck sauce so I wanted a little sweet)

What to do.

Brown the turkey in a pan needs to be bigger. once cooked add the bag of shredded cabbage and the rest of the ingredients except honey. stir it all up and cook until cabbage starts to get tender. Like 5 min. Swirl in some honey. Mix and enjoy


Mint chocolate Nice Cream – dairy free

Treats are literally my favorite and my family’s and my youngest Riley and I love to play around in the kitchen and make up recipes. We do find inspiration from what we have and other recipes on line and tweak it. I only share if we succeed!

That is not always the case. This time we WON! Everyone in the house loved it.


4 cups original almond milk

3cups spinach (gives the lovely green color and great way to sneak in a veggie)

1 banana broken up

1/2 cup honey

1/4 cup maple syrup

1 tsp vanilla

3/4 tsp mint

1/4 tsp salt

1/4 cup crushed dark chocolate chips

1/4 cup dark chocolate chips

Throw everything but the chocolate into the blender! Blend till smooth. If you have an ice cream maker dump in there run until desired consistency and add in the chocolate while mixing.

We ran ours like 30 min.

If you do not dump into a freezer safe container. Stir in chocolate and freeze until desired consistency.

My husband said it reminded him of Italian ice. It was very good!

Store in freezer.
