I started meal prepping! A pain in the ass initially but it is great when I’m starving and can grab something quick to help me stay on track. So its nice!! I like simple meals. and something that isn’t going to take a bunch of time. Cause I don’t have it.
roughly 2 pounds boneless skinless chicken (I used tenders)
California Melody bag of veggies (carrots, Cauliflower, and broccoli) (steamer)
1 cup diced peppers (I used yellow and orange)
1/2 cup low sodium soy sauce
1/3 cup honey
Brown rice ( I used quick cooking and I made a serving)
Olive Oil Spray
What you need to do:
Start cooking the brown rice. Start cooking the chicken in a pan. sprayed with olive oil. Season with salt, pepper, and garlic powder. While that is cooking you steam the bag of veggies in microwave for 3 min. Spray another pan. Add peppers and all the other veggies. Sauté a few min. Then add soy sauce, honey and crushed red pepper. Simmer for a few min.
Dice up cooked chicken and start dividing up the food. In a container. I put a yellow (1/2 cup)of rice, a red (3/4 Cup) of chicken, then a green (1 Cup) of veggies. I got 3 then I had an extra of chicken and rice which I can uStore in fridge and heat as needed.
