~2 jumbo (like the since of your head) sweet potatoes (not yams)peeled and cubed (as best you can **warning** cutting these bad boys is a workout)
~ ground ginger
~2 tbsp butter
~around 4 tbsp of unsweetened vanilla almond milk.
I am going to warn you all now. I do not measure spices I eyeball it.
In a large pot fill with cold water, a dash of lemon extract, sea salt. Then sprinkle with nutmeg, allspice, and ginger . Add the potatoes and bring to a boil and let cook till the potatoes are tender. (About 30 min)
Drain and put back in pan. Add butter, milk, and cinnamon and then blend till smooth. Sprinkle with sea salt to taste.
Best part… With the left over yiu can make sweet potato pancakes!!
